  1. Harvest

What is the secret behind the rich flavor of our wines? The high quality of the fruit and the special care we take when picking it. In Mexico, the harvesting period is from June to September.   1. Crushing and pressing

When our winemakers have separated steams and grapes, the latter are gently squeezed to release juice. Yes! At some places the crushing process is made by foot.

Then comes the pressing. With this we separate the grape’s skin from the juice to obtain free-run grape juice, a high quality liquid used for winemaking. For wines of our own like the Selene Rosé, we press the grapes before fermentation, and for our Eclipse Red Wine, we obtain free-run grape juice after the primary fermentation.

  1. Fermentation

At this stage of the process our winemakers use yeast to turn grape juice into wine. When we talked about our Eclipse Red Wine, we mentioned the primary fermentation, remember? Well, that’s because there are three fermentation phases: primary fermentation, cold stabilization and malolactic fermentation.

The whole process takes from three to six months! After that, our winemakers start the clarification, which varies from one type of wine to another.

  1. Aging

For this part, our winemakers take the decision that completes the process of making our wines. Whether they are bottled up immediately after the clarification, or left on an oak barrel for aging, we can assure you: lodging in Valle de Guadalupe will be a palatable dream with diverse wine flavors.
